Succulent beef stir-fry with vibrant vegetables for a gourmet meal at home.
Ingredients:
  • 2 pounds boneless beef sirloin or beef top round steaks (3/4" thick)
  • 3 tablespoons cornstarch
  • 1 (10.5 ounce) can Campbell's® Condensed Beef Broth
  • 0.5 cup soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 4 cups sliced shiitake mushrooms
  • 1 head Chinese cabbage (bok choy), thinly sliced
  • 2 medium red peppers, cut into 2"-long strips
  • 3 stalks celery, sliced
  • 2 medium green onions, cut into 2" pieces
  • Hot cooked regular long-grain white rice
Instructions:
  • Cut beef into paper-thin slices.
  • Combine cornstarch, broth, soy sauce, and sugar until well blended. Let it sit for later use.
  • Heat up a tablespoon of oil in a saucepot or wok over high heat until sizzling. Brown the beef in two separate batches by stir-frying until golden. Remove the beef from the pot and set aside.
  • Pour in a luxurious tablespoon of oil into the pan. Next, gracefully add the mushrooms, cabbage, peppers, celery, and green onions in two delightful batches. Saute over medium heat until they reach that perfect tender-crisp texture. Now, ceremoniously set the vegetables aside.
  • Mix the cornstarch mixture well and pour it into the pot. Simmer until it boils and thickens, stirring continuously. Place the beef and vegetables back into the pot and heat everything through. Serve the delicious dish over rice.
