Quick and refreshing chilled Japanese cucumber salad with tangy-sweet flavor that tastes great even the next day!
Ingredients:
  • 2 medium cucumbers
  • 6 tablespoons rice wine vinegar
  • 6 tablespoons white sugar
  • 2 tablespoons soy sauce
  • 0.5 teaspoon sesame seeds, or more to taste
Instructions:
  • Peel cucumbers, then halve them lengthwise and remove the seeds. Slice into 1/4-inch thick half moons.
  • Combine vinegar, sugar, and soy sauce in a bowl, stirring until sugar dissolves. Toss in cucumbers until coated. Chill for a minimum of 2 hours. Garnish with sesame seeds and serve chilled.
