Flavorful jasmine rice cooked with sauteed bok choy in savory chicken broth for a tasty Asian-inspired side dish.
Ingredients:
  • 1 head bok choy, chopped
  • 2 cups chicken stock
  • 1 cup uncooked jasmine rice
  • 1 tablespoon chopped fresh chives, or to taste
  • 1 pinch ground black pepper
Instructions:
  • In a deep wok or wide pot over medium heat, melt the butter. Saute bok choy until soft, about 5 minutes. Increase heat to high, pour in chicken stock, and bring to a boil. Stir in rice, olive oil, and chives until well combined.
  • Cover tightly, simmer for 20 minutes. Check rice at 10 minutes to ensure proper doneness; avoid dry or hard rice. Season with pepper and serve.
