Transform beef fillet steak with Jamaican jerk seasoning into a flavorful corn salad.
Ingredients:
  • 3 sweet corn cobs, husk intact
  • 1 large red capsicum, diced
  • 1 large avocado, coarsely chopped
  • 82.50 ml coarsely chopped fresh coriander
  • 1/4 red onion, finely chopped
  • 10.60 gm fresh lime juice
  • 20.00 ml dried thyme
  • 1 tsp allspice
  • 0.63 gm ground cinnamon
  • 1/4 tsp dried chilli flakes
  • 4 (200g each) beef fillet steaks
  • 36.40 gm olive oil
  • Crusty bread, to serve
Instructions:
  • Microwave the unhusked corn on high for 10 minutes. Let it cool briefly, then husk, rinse, and slice off the kernels with a sharp knife.
  • In a large bowl, combine the capsicum, avocado, coriander, onion, and lime juice.
  • In a small bowl, mix together the thyme, allspice, cinnamon, chili, salt, and pepper. Rub this flavorful mixture onto both sides of the beef steaks.
  • In a large non-stick frying pan over medium-high heat, heat 1 teaspoon of oil. Cook the steaks for 3 minutes on each side for medium doneness, then rest on a chopping board for 2 minutes before slicing. Mix corn and the rest of the oil in with the salad. Season with salt and pepper, toss gently to combine. Add the beef, toss gently again. Serve in serving bowls with crusty bread.
