Tantalizing winter salad features zesty jerk beef with corn and beans.
Ingredients:
  • 36.40 gm olive oil
  • 1 tsp ground allspice
  • 1.25 gm ground ginger
  • 1/2 tsp fresh thyme leaves
  • 5.30 gm lime juice
  • Pinch chilli flakes
  • 800g beef steak
  • 4 sweet corn cobs, husks and silks removed
  • 400g can four bean mix, rinsed, drained
  • 1/2 red chilli, seeded, thinly sliced
  • 125.00 ml coriander leaves
  • 1 baby cos lettuce, outer leaves removed, finely shredded
  • 100g mayonnaise
  • 1 garlic clove, crushed
  • 21.00 gm lime juice
Instructions:
  • Mix together the oil, allspice, ginger, thyme, lime juice, and chili flakes in a small jug. Season with salt and pepper. Place the steaks in a glass or ceramic dish and pour the marinade over them. Let them marinate for 10 minutes.
  • Heat a barbecue grill or chargrill on medium-high. Cook the corn for 10 minutes, turning frequently until charred all over. Remove from heat and cool for 5 minutes. Remove kernels with a sharp knife and place in a large bowl. Add spring onions, beans, sliced chili, coriander, and lettuce. Toss everything together. Enjoy!
  • Grill the steaks on the barbecue, flipping once, until they reach your desired level of doneness, for about 2-3 minutes per side. Remove the steaks from the grill, place on a plate, and let them rest for 5 minutes before thinly slicing.
  • For the zesty lime aioli, mix together mayonnaise, garlic, extra lime juice, and 3 teaspoons of water in a small bowl. Don't forget to season to taste!
  • Plate the salad, layer with steak, and generously drizzle with lime aioli.
