Quick and easy no-yeast cinnamon-raisin buns for a delicious morning treat!
Ingredients:
  • 0.33333334326744 cup butter
  • 1 cup packed brown sugar
  • 3 teaspoons ground cinnamon
  • 2 tablespoons white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 0.25 cup butter, chilled
  • 1 cup cold milk
  • 0.33333334326744 cup currants
  • 0.5 cup confectioners' sugar, sifted
  • 3 tablespoons milk
Instructions:
  • Preheat your oven to a toasty 400°F (200°C) and generously grease a 12-cup muffin tin.
  • Combine 1/3 cup of butter with brown sugar and cinnamon until creamy. Place 1 teaspoon of the mixture into each muffin cup and set aside the rest.
  • In a large bowl, mix flour, sugar, baking powder, and salt. Add 1/4 cup cold butter and blend until crumbly. Create a well in the center, pour in the milk, and stir until a soft dough forms, adding more milk if necessary.
  • Transfer the dough onto a lightly floured surface. Knead it 8 to 10 times. Shape the dough into a 1/3 inch thick, 12-inch long rectangle. Spread the leftover cinnamon mixture evenly over the dough. Sprinkle currants on top. Roll the dough into a log like a jelly roll. Before slicing, mark the dough to guide your cuts, then slice the log into 12 pieces. Arrange the slices cut-side down in the muffin pan.
  • Bake in the preheated oven until rolls are golden brown, for 20 to 25 minutes. Then, transfer them to a serving tray.
  • To make the glaze, combine milk with confectioners' sugar until smooth, adjusting consistency with more liquid if needed. Drizzle generously over cinnamon rolls.
