Experience the ultimate homemade ramen - a complex and comforting bowl bursting with mind-blowing flavors. A must-try for all ramen lovers!
Ingredients:
  • 1 x Marinated eggs
  • 1 x Ramen noodles or 450g dried ramen noodles
  • 750 g higher-welfare pork belly skin off
  • 10 g coarse kosher salt
  • 20 g soft light brown sugar
  • 30 ml low-salt soy sauce
  • 1 onion
  • 4 cloves of garlic
  • 3 cm piece of ginger
  • 1 tart green apple
  • 1 tablespoon canola or rapeseed oil
  • 75 ml sake
  • 75 ml mirin
  • 100 ml low-salt soy sauce
  • 1 litre quality organic chicken stock
  • 1 litre dashi
  • 3 spring onions
  • 1 fresh red chilli
Instructions:
  • The day before cooking, marinate the eggs and prepare the pork. Place the pork in a tray, season with kosher salt, sugar, and soy sauce, then rub all over. Cover and refrigerate overnight. The next day, preheat the oven. Remove the pork from the marinade, place it in a roasting tray, cover with foil, and roast until tender. Make the Ramen noodles. For the apple soffritto, finely chop the onion, garlic, ginger, and apple, then cook gently in oil until softened. For the shoyu tare, boil sake and mirin, then simmer with soy sauce and apple soffritto. When ready to serve, prepare the broth. Cook the noodles, then divide them among bowls. Top with pork slices, marinated egg, spring onions, and chili. Enjoy!
