Juicy seared steak

Elevate your steak night with a mouthwatering dish featuring juicy steak, toasted almonds, fluffy couscous, and the game-changing flavor of preserved lemons. It's a surefire way to impress your guests and take your cooking to the next level!
Ingredients:
  • ½ a bunch of mint (15g)
  • 100 g couscous
  • 1 x 200 g higher-welfare sirloin steak
  • 20 g flaked almonds
  • ½ tablespoon runny honey
  • 160 g ripe mixed-colour cherry tomatoes
  • ½ x 185 g jar of artichoke hearts in oil
  • 1 small preserved lemon
Instructions:
  • Prepare mint leaves by removing them from the stalks. Combine couscous with boiling kettle water in a bowl, cover and set aside. Season steak with sea salt and black pepper, then sear in a non-stick frying pan until golden brown on both sides. Toast almonds in the pan for the final 30 seconds. Remove steak and almonds from the pan. In the same pan, add tomatoes, drained artichokes, and a splash of water. Cook for 2 minutes, then stir in finely chopped lemon, most of the mint leaves, and cook a few more minutes. Fluff up couscous, season, and divide onto plates. Top with tomatoes, artichokes, sliced steak, almonds, and remaining mint leaves. Serve and enjoy.
