Golden roast turkey with herbed champagne broth for a succulent Thanksgiving centerpiece.
Ingredients:
  • 2 tablespoons dried parsley
  • 2 tablespoons ground dried rosemary
  • 2 tablespoons rubbed dried sage
  • 2 tablespoons dried thyme leaves
  • 1 tablespoon lemon-pepper seasoning
  • 1 tablespoon salt
  • 1 (15 pound) whole turkey, neck and giblets removed
  • 1 medium orange, cut into 8 wedges
  • 1 medium onion, chopped into large pieces
  • 1 medium carrot, cut into 1/2-inch slices
  • 2 stalks celery, cut into 1/2-inch slices
  • 1 (750 milliliter) bottle champagne
  • 1 (14.5 ounce) can chicken broth
Instructions:
  • Begin by gathering all your ingredients. Preheat the oven to 350 degrees F (175 degrees C) and line a roaster with sheets of aluminum foil that are long enough to wrap around the turkey.
  • Combine the parsley, rosemary, sage, thyme, lemon-pepper seasoning, and salt in a small bowl, mixing well.
  • Massage the fragrant herb mixture inside the turkey, filling it generously with vibrant orange wedges, onion, carrot, and celery. Secure the turkey legs with kitchen string and neatly tuck the wings beneath the body.
  • Lay the turkey on the foil in the roasting pan and generously pour champagne and chicken broth over it, ensuring to also add some liquid into the cavity for maximum flavor infusion.
  • Cover the turkey with aluminum foil, ensuring it doesn't touch the surface of the turkey.
  • Roast the turkey in a preheated oven until the juices run clear, which should take 2 ½ to 3 hours. Uncover the turkey and bake until the skin is golden brown for an additional 30 to 60 minutes. Check for doneness by inserting an instant-read thermometer into the thickest part of the thigh near the bone; it should read 180 degrees F (82 degrees C).
  • Once the turkey is cooked, cover it with aluminum foil and let it rest in a warm spot for 10 to 15 minutes before carving.
