Irresistible jumbo apple walnut muffins with a sweet cinnamon crumble topping.
Ingredients:
  • 1.25 cups white sugar
  • 0.5 teaspoon salt
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups peeled, cored and sliced apples
  • 0.5 cup walnuts
  • 0.25 cup white sugar
  • 2 tablespoons butter, cubed
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C). Grease the jumbo muffin pan generously with cooking spray or line it with muffin papers.
  • In a large bowl, use an electric mixer to beat together 1 ¼ cups sugar, 1/2 cup butter, vanilla, and salt until light and fluffy. Add eggs one at a time. Combine 1 ¾ cups flour, baking powder, and 1/2 teaspoon cinnamon; then stir into the butter mixture alternately with milk until combined. Gently fold in apples and walnuts and scoop the batter into muffin cups filling them 3/4 full.
  • For the cinnamon crumble topping, mix 1/4 cup white sugar, 3 tablespoons flour, 2 tablespoons cubed butter, and 1/2 teaspoon cinnamon in a medium bowl using a pastry blender until crumbly. Sprinkle the muffin tops with the crumble mix.
  • Bake muffins in the preheated oven for about 30 minutes until golden brown and a toothpick inserted in the center comes out clean. If browning too quickly, cover with foil. Cool on a wire rack after removing from pans.
