Indulge in delicious coffee-infused muffins made with Betty Crocker® chocolate chip mix.
Ingredients:
  • 3/4 cup chocolate milk
  • 1/4 cup vegetable oil
  • 2 tablespoons instant espresso coffee powder or granules
  • 2 eggs
  • 1 box (14.75 oz) Betty Crocker™ Chocolate Chip Muffin & Quick Bread Mix
  • 1 container (8 oz) mascarpone cheese or 1 package (8 oz) cream cheese, softened
  • 1 tablespoon sugar
  • 1/2 teaspoon instant espresso coffee powder or granules
  • 3 tablespoons coarsely crushed chocolate-covered coffee beans
Instructions:
  • Preheat oven to 425°F (400°F for dark or nonstick pan). Line 6 jumbo muffin cups with jumbo foil baking cups and spray them with cooking spray.
  • In a medium bowl, whisk together chocolate milk, oil, 2 tablespoons of coffee powder, and eggs until well combined. Slowly fold in muffin mix until just combined (it's okay if the batter is slightly lumpy). Divide the batter evenly among muffin cups, filling each about two-thirds full.
  • Bake for 22 to 24 minutes until golden brown and tops bounce back when gently touched. Allow to cool for 5 minutes, then gently remove from pan to a cooling rack. Let cool completely.
  • Blend cheese, sugar, and 1/2 teaspoon coffee powder in a medium bowl until smooth. Top each muffin with 1 tablespoon of the cheese mixture and sprinkle with crushed coffee beans. Chill in the refrigerator.
