Upgrade your favorite family meal by making homemade jumbo fish fingers using salmon or white fish. Get creative with flavored breadcrumbs and customize the recipe using any fish fillets you have on hand. Watch the tips below for more exciting variations.
Ingredients:
  • 1 x 1.2 kg side of salmon skin off, pin-boned, from sustainable sources
  • 100 g plain flour
  • 2 large free-range eggs
  • 2 teaspoon sweet smoked paprika
  • 200 g wholemeal bread
  • 30 g Cheddar or Parmesan cheese
  • extra virgin olive oil
Instructions:
  • Prepare the fish: Cut the salmon side into 10 portions, each weighing 120g. The pieces may vary in size, giving them a rustic touch. Slice the side lengthwise into 3cm thick strips, then cut into chunks. Coat the fish: Spread flour on a plate. In a shallow bowl, combine eggs with paprika, sea salt, and black pepper. In a food processor, blend bread, cheese, 2 tablespoons of oil, sea salt, and black pepper until you get breadcrumbs. Transfer to a baking tray. Dredge the fish: Coat each fish portion in flour, dip in the egg mixture, then cover with breadcrumbs. Place on a baking tray lined with greaseproof paper. Cook the fish: Bake in a preheated oven at 200°C/400°F/gas 6 for 15 minutes if fresh, or 20 minutes if frozen, until golden and cooked through. Enjoy!
