Jumbo Rainbow Cupcakes

Create vibrant and moist rainbow cupcakes using a variety of food coloring for festive treats suitable for any celebration.
Ingredients:
  • 6 egg whites
  • 2 boxes Betty Crocker™ Super Moist™ White Cake Mix
  • 2 1/2 cups water
  • 2/3 cup vegetable oil
  • Red, yellow, green and blue liquid food colors
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
Instructions:
  • Preheat your oven to 350°F and line 12 jumbo muffin cups with jumbo paper baking cups.
  • In a large bowl, use an electric mixer on low speed for 1 minute to blend cake mixes, water, oil, and egg whites. Increase speed to medium and mix for 2 to 3 minutes, scraping the bowl occasionally, until well combined.
  • Divide the batter into 6 bowls and add food coloring to each one to create vibrant colors. Use 18 drops of red for the red batter, 4 drops red and 12 drops yellow for orange, 12 drops yellow for yellow, 12 drops green for green, 12 drops blue for blue, and 9 drops red and 6 drops blue for purple.
  • Divide the red batter evenly among the muffin cups, then layer each remaining color batter on top, using about 1 tablespoon of each until all 6 colors are used up.
  • Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then remove from pans onto cooling racks and allow to cool completely for about 30 minutes.
  • Frost cupcakes using a piping bag or offset spatula.
