Bake 6 jumbo or 12 regular whole wheat blueberry muffins for a satisfying breakfast on-the-go or with your coffee.
Ingredients:
  • 1.5 cups whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 1 cup skim milk
  • 2 tablespoons butter, softened
  • 1 tablespoon vegetable oil
  • 2 cups fresh blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 6 jumbo muffin cups with paper liners.
  • Combine whole wheat flour, white sugar, baking powder, 1/2 teaspoon cinnamon, and salt in a bowl. In a separate bowl, whisk together skim milk, egg, softened butter, and vegetable oil. Add the liquid ingredients to the dry mixture and stir until smooth. Gently fold in blueberries and fill muffin cups to the top with the batter.
  • In a bowl, mix brown sugar and 1/2 teaspoon of cinnamon, then generously sprinkle the mixture over the muffins, if desired.
  • Bake in the preheated oven for 20-25 minutes until the muffins are golden brown and a toothpick inserted into the center comes out clean.
