Quick and healthy minestrone soup with kale, beans, and zoodles - perfect for a low calorie lunch on-the-go!
Ingredients:
  • 4 (about 400g) zucchini
  • 500ml (2 cups) store-bought tomato & basil passata
  • 400g can cannellini beans, rinsed, drained
  • 60g (1/3 cup) semi-dried tomato strips
  • 50g ham, thinly sliced
  • 4 kale leaves, stems removed, thinly sliced
  • 1.5L (6 cups) boiling water
  • 40.00 gm basil pesto, to serve
Instructions:
  • Create long, thin zucchini noodles using a spiralizer or julienne peeler.
  • Create beautiful layers of passata, zucchini noodles, beans, tomato, ham, and kale in four 750ml (3 cup) glass jars. Seal with lids and chill in the fridge until you're ready to enjoy.
  • When ready to enjoy, pour 375ml (1 1/2 cups) boiling water into each jar, stirring until well mixed. Gently place the lids on top. Let sit for 2 minutes until the vegetables are tender. Top with a spoonful of basil pesto before serving.
