Create a flavorful Italian-inspired kale and white bean stew with tomatoes, chile peppers, onions, garlic, and herbs. Simply simmer all the ingredients together for a delicious meal.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 pound kale, stems removed and leaves coarsely chopped
  • 1 (14 ounce) can diced tomatoes with green chile peppers
  • 1.5 cups water
  • 2 bay leaves
  • 0.25 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 2 (15 ounce) cans canned cannellini beans, drained and rinsed
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon chopped fresh basil
Instructions:
  • In a large deep skillet over medium-high heat, heat the olive oil. Add the onions and kale, stirring occasionally until the onions are translucent and the kale wilts and shrinks in size, for about 5 to 7 minutes.
  • Lower the heat to medium. Combine tomatoes, green chiles, garlic, water, bay leaves, cumin, and onion powder with the kale mixture. Simmer until kale is soft, for about 1 hour. Add cannellini beans and simmer until heated through, approximately 10 minutes. Stir in oregano and basil. Season with salt and pepper to taste.
