Savory vegetarian egg bake with kale and olives, perfect for brunch, ready in under an hour.
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion, chopped (1 cup)
  • 4 cups packed torn fresh kale leaves
  • 1/2 cup halved pitted mixed olives
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 2 eggs
Instructions:
  • Preheat the oven to 350°F and generously coat a 9-inch quiche dish or glass pie plate with cooking spray.
  • Heat butter and oil in a large skillet over medium heat. Cook onion for 2 to 3 minutes until soft. Add kale and salt, cook for another 2 to 3 minutes until kale wilts. Transfer mixture to a quiche dish and sprinkle with olives.
  • Whisk together Bisquick mix, milk, and eggs in a medium bowl until smooth. Pour the mixture over the kale and olives.
  • Bake without a cover for 30 to 40 minutes or until a knife inserted in the center comes out clean.
