Try this elevated twist on meatloaf - Lamb Loaf infused with parsley, onion, lemon zest, and allspice. Pair with pita bread or rice for a delightful meal.
Ingredients:
  • 1 bunch fresh parsley, chopped
  • 3 medium onions, finely chopped
  • 1.5 pounds ground lamb
  • 2 teaspoons ground allspice
  • 1.5 teaspoons grated lemon zest
  • 2 teaspoons salt
  • 0.25 cup butter, softened
  • 1 medium tomato, sliced
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • Combine parsley, onions, lamb, allspice, lemon zest, salt, and butter in a large bowl until thoroughly mixed. For best results, use your hands. Transfer mixture to a baking dish or shape into a 2-inch tall round on a rimmed baking sheet. Top with tomato slices.
  • Uncover and bake in the preheated oven for 50 minutes, until fully cooked with an internal temperature of at least 160 degrees F (72 degrees C). Enjoy with pita bread or rice.
