Keto-friendly bacon cheeseburger soup, sans the bun but packed with all the flavors you love. You won't even notice the difference!
Ingredients:
  • 3 tablespoons tomato paste
  • 6 slices bacon
  • 1 pound lean ground beef (80% lean)
  • 3 cups reduced-sodium beef broth
  • 1 cup shredded Cheddar cheese
  • 4 ounces cream cheese
  • 2 spears kosher dill pickles, chopped
  • 1 tablespoon steak sauce
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1 head romaine lettuce, chopped into bite-sized pieces
  • 6 grape tomatoes, halved
  • 0.25 cup chopped red onion
Instructions:
  • Preheat a large soup pot over medium-high heat and cook the bacon until crisp, which should take around 10 minutes. Then, transfer the bacon to a paper towel-lined plate and let it cool.
  • Place the beef in the soup pot and press it down gently with a spatula. Let it cook until the bottom is golden brown, approximately 5 minutes. Flip the beef over and cook the other side for an additional 5 minutes. Stir in the broth, Cheddar cheese, cream cheese, pickles, tomato paste, steak sauce, mustard, onion powder, chili powder, and black pepper. Combine everything thoroughly, ensuring the beef is broken into smaller pieces.
  • Lower the heat to a gentle simmer, continuing to cook and stir until the cream cheese is completely melted, which should take around 3 minutes. Cover the pot and allow the soup to gently simmer for an additional 25 minutes.
  • Pour piping hot soup into each bowl, layer with fresh lettuce, sprinkle each bowl with crumbled bacon, and top with vibrant tomatoes and red onions.
