Keto chicken and broccoli casserole: Delicious way to enjoy leftover chicken with family.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 2.5 cups cooked chicken, cut into bite-sized pieces
  • 3 cups chopped, cooked broccoli
  • 0.25 cup sliced almonds
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 0.5 (8 ounce) package cream cheese, cut into 1-inch cubes
  • 4 ounces grated sharp Cheddar cheese
  • salt and ground black pepper to taste
  • 0.75 cup crushed pork rinds
Instructions:
  • Heat up your oven to 350°F (175°C).
  • Drizzle olive oil in a 9x13-inch baking dish, ensuring it coats the bottom and sides. Place cooked chicken in a single layer in the dish. Evenly spread cooked broccoli over the chicken and sprinkle with almonds.
  • In a saucepan over medium heat, melt butter. Stir in cream and cook for 1 to 2 minutes. Add cream cheese and stir until smooth and melted, about 2 to 3 minutes. Mix in Cheddar cheese and stir until melted, around 2 to 3 minutes. Season with salt and pepper. Pour the delicious sauce over chicken, broccoli, and almonds, then sprinkle with crushed pork rinds. Enjoy!
  • Bake until the sauce is bubbly, about 25-30 minutes in the preheated oven.
