Create a crispy keto "fathead" pizza crust using cheese and almond flour, perfect for any toppings.
Ingredients:
  • 1.5 cups mozzarella cheese, shredded
  • 2 tablespoons cream cheese, softened
  • 0.75 cup almond flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon freshly ground black pepper, or to taste
  • 1 egg, beaten, at room temperature

  • 2 ounces Mexican chorizo, crumbled
  • 0.5 cup mozzarella cheese, shredded
  • 0.25 cup salsa
  • 1 tablespoon diced onion
  • 2 tablespoons cilantro leaves for garnish
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a microwave-safe bowl, melt 1 1/2 cups of mozzarella cheese and cream cheese together until smooth, about 1 1/2 minutes. Mix in almond flour, salt, oregano, garlic powder, and black pepper. Use your hands to form dough, then add the beaten egg and mix well to combine.
  • Prepare the dough: Spray 2 large pieces of parchment paper with non-stick spray. Place the dough between them and flatten with a rolling pin to a 10-inch round. Transfer the flattened dough onto a baking sheet by peeling off the top parchment paper. Pierce the dough all over with a fork to prevent rising.
  • Bake in the preheated oven for 12 to 17 minutes or until the bottom begins to brown.
  • Place the chorizo in a microwave-safe bowl and cover with a paper towel. Microwave in one-minute intervals, stirring well after each interval.
  • After baking the pizza crust, sprinkle 1/2 cup of mozzarella cheese, chorizo, salsa, and onion on top. Continue baking until cheese is melted, for an extra 4 to 6 minutes. Finish by garnishing with fresh cilantro leaves.
