Quick keto shrimp Alfredo featuring tender shrimp in a creamy garlic-Parmesan sauce with sun-dried tomatoes and kale.
Ingredients:
  • 2 tablespoons salted butter
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 (8 ounce) package cream cheese, cubed
  • 0.5 cup heavy whipping cream
  • 1 tablespoon garlic powder
  • 1 tablespoon dried basil
  • 1 tablespoon ground black pepper
  • 2 teaspoons salt
  • 1.5 cups grated Parmesan cheese
  • 1 teaspoon psyllium husk
  • 0.5 cup baby kale
  • 5 sun-dried tomatoes, cut into strips
Instructions:
  • In a large skillet over medium heat, melt butter. Add shrimp and reduce heat to medium-low. Cook for 1 minute, flipping shrimp after 30 seconds until slightly pink. Increase heat to medium, add cream cheese and heavy cream, stirring frequently until the sauce is smooth, about 2 minutes.
  • Season the skillet with garlic powder, basil, pepper, and salt, then mix in Parmesan cheese until fully incorporated. Let the sauce simmer until it thickens, approximately 5 minutes. Stir in psyllium husk and continue cooking until you reach your desired consistency, usually 5 to 7 minutes. Finally, gently fold in kale and sun-dried tomatoes, and remove from the heat.
