Keto shrimp scampi with low-carb shirataki noodles made from konjac yam.
Ingredients:
  • 2 (8 ounce) packages shirataki noodles, drained and rinsed
  • 1 tablespoon minced shallot
  • 2 cloves garlic, minced
  • 0.25 teaspoon red pepper flakes
  • 12 ounces raw shrimp, peeled and deveined
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons dry white wine
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Place shirataki noodles in a pot, cover with water, and bring to a boil. Cook for 5 minutes, then drain.
  • After draining the noodles, put them back in the saucepan and cook over medium heat for 5-6 minutes to remove excess moisture. Then, remove from the heat and set aside.
  • Heat olive oil in a large skillet over medium heat. Cook shallot until translucent, about 2 to 3 minutes, being careful not to burn. Stir in garlic and red pepper flakes for 1 minute. Add shrimp and cook for 2 to 3 minutes on each side, ensuring not to overcook. Season with salt and pepper to taste.
  • Move shrimp to a bowl, keeping the flavorful pan drippings in the skillet. Combine lemon juice and white wine in the skillet. Incorporate butter and simmer until the sauce slightly thickens, about 3 to 4 minutes.
  • Add the shrimp back to the skillet followed by the noodles. Sprinkle with parsley and toss everything together until well combined.
