Refreshing keto shrimp salad with romaine lettuce, grapefruit, and flavorful low-carb dressing.
Ingredients:
  • 3 tablespoons soy sauce
  • 1 lime, juiced
  • 2 teaspoons honey
  • 2 teaspoons sesame oil
  • 2 teaspoons rice vinegar
  • 1 pomelo
  • 1 head romaine lettuce, chopped
  • 0.5 pound cooked shrimp
  • 2 tablespoons chopped peanuts, or more to taste
  • 2 tablespoons chopped green onion, or to taste
Instructions:
  • Whisk soy sauce, lime juice, honey, sesame oil, and rice vinegar in a bowl until fully incorporated to create the flavorful dressing.
  • 1. Trim the top off the pomelo. Score the peel about 1/2-inch deep with a sharp knife. Peel away the skin and pith, and divide the pomelo into halves. Separate the segments, remove the membrane and seeds, and break the fruit into bite-sized pieces.
  • Combine pomelo and romaine lettuce in a bowl. Add shrimp on top, then sprinkle with peanuts and green onion for a delightful touch. Finish by drizzling the dressing over the salad and gently toss to combine before serving.
