Key Lime Dessert with Raspberry Sauce

Impress guests with a quick and easy dessert that serves 24, ready to chill in under an hour.
Ingredients:
  • 2 (3-oz.) pkg. Jell-O™ lime-flavored gelatin
  • 2 cups boiling water
  • 1 cup Key lime juice
  • 2 (14-oz.) cans sweetened condensed milk (not evaporated)
  • 1 pint (2 cups) whipping cream
  • 45 graham cracker squares
  • 2 tablespoons Key lime juice
  • 2 tablespoons water
  • 1 (18-oz.) jar (1 1/2 cups) seedless raspberry jam
  • Fresh raspberries
  • Grated lime peel or fresh mint leaves
Instructions:
  • In a very large bowl, mix gelatin with boiling water until dissolved, stirring for 2 to 3 minutes. Then, add 1 cup of lime juice and sweetened condensed milk. Beat with an electric mixer on medium speed until smooth. Set aside.
  • Whip the cream in a medium bowl until stiff peaks form. Carefully fold the whipped cream into the gelatin mixture until just combined.
  • Prepare your 13x9-inch pan by greasing it. Place 5 cracker squares in a row along the length of the pan. Repeat this process two more times, using a total of 15 cracker squares to cover the bottom of the pan. Set aside.
  • Mix 2 tablespoons of lime juice with 2 tablespoons of water in a small bowl. Brush the lime mixture onto each cracker square in the pan until just moistened. Pour 3 1/3 cups of filling over the cracker crust, spreading it evenly. Repeat the cracker and filling layers twice. Lightly tap the pan on a hard surface to settle the layers. Cover with foil and refrigerate for at least 6 hours or overnight.
  • In a microwave-safe bowl, combine jam and 2 tablespoons of water. Microwave on Medium for 30 seconds or until the jam is melted, stirring halfway through. Cover and refrigerate until ready to serve.
  • Cut the dessert into squares. Drizzle 1 tablespoon of raspberry sauce on each plate. Place the dessert squares on top. Garnish with raspberries and lime peel. Chill in the fridge.
