Key Lime Ice Blocks: A refreshing summer treat inspired by Key Lime pie.
Ingredients:
  • 185ml lime juice
  • 2 tsp finely grated lime rind
  • 395g sweetened condensed milk
  • 250ml thickened cream
  • Green liquid food colouring
  • 80g Granita biscuits or digestive biscuits
  • 30g butter, melted
  • 4 Free Range Egg whites
  • 220g caster sugar
Instructions:
  • In a medium bowl, blend together lime juice, lime rind, condensed milk, and cream until smooth. Strain the mixture through a fine sieve into a jug, add a touch of green food coloring for a vibrant hue. Divide the mixture evenly among ten 1/3-cup (80ml) ice block molds.
  • Start by crushing the biscuits in a food processor and then combine them with the butter. Carefully spoon the mixture over the top of each iceblock, pressing gently to smooth it out. Insert iceblock sticks and freeze for 6 hours until firm. Once firm, unmold the iceblocks and place them on a tray lined with baking paper before returning them to the freezer. Enjoy!
  • Create a double boiler by placing a large heatproof bowl over simmering water. Combine egg whites and sugar in the bowl. Whisk continuously for 8 minutes until the mixture is frothy, sugar is dissolved, and it reaches 72°C on a candy thermometer. Transfer to an electric mixer and whisk until a thick and glossy meringue with firm peaks forms.
  • Preheat the grill on low heat and line a baking tray with foil. Arrange the ice blocks on the tray and spread half of the meringue on top. Grill for 30 seconds or until lightly toasted. Flip the ice blocks and spread the rest of the meringue over them. Grill for another 30 seconds. Serve immediately or store in the freezer until ready to enjoy.
