Delight in a mini key lime pie parfait - refreshing, tangy, and sweet with a luscious appeal.
Ingredients:
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 1 tablespoon white sugar
  • 1 (8 ounce) package reduced-fat cream cheese, softened
  • 0.5 cup low-fat vanilla Greek yogurt
  • 0.5 cup fat-free sweetened condensed milk
  • 0.25 cup key lime juice
  • 1 drop green food coloring, or as needed
Instructions:
  • In a bowl, mix together graham cracker crumbs, butter, and sugar. Press 1 tablespoon of the mixture into the bottom of each of the ten 2-ounce shooter glasses.
  • In a medium bowl, use an electric mixer to blend cream cheese and yogurt until smooth. Set aside.
  • Mix condensed milk and key lime juice in a separate bowl. Combine with the cream cheese mixture until smooth. Split the mixture in half. Color one half with green food coloring. Transfer each portion into individual resealable plastic bags and cut a small hole in one corner of each bag.
  • Pour white mixture into each shooter glass, tapping gently on the counter to even out the cheesecake. Repeat with green mixture. Chill filled glasses in the refrigerator for at least 30 minutes.
