Indulge in decadent key lime poke cake with zesty Jell-O and customizable creamy lime curd.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix (such as Duncan Hines®)
  • 1 cup water
  • 0.33333334326744 cup vegetable oil
  • 3 eggs
  • 1 (3 ounce) package lime-flavored gelatin mix (such as Jell-O®)
  • 1 cup boiling water
  • 0.25 cup key lime juice, or more to taste
  • 2 eggs
  • 2 egg yolks
  • 1 cup white sugar
  • 0.75 cup lime juice, or more to taste
  • 4 teaspoons lime zest, or to taste
  • 0.5 teaspoon cornstarch
  • 0.25 cup butter
  • 2 drops green food coloring
  • 1 (8 ounce) container whipped topping (such as Cool Whip®)
Instructions:
  • Preheat the oven to 350° F (175° C) and grease a 9x13-inch baking pan.
  • Prepare the cake by combining cake mix, water, oil, and eggs in a large bowl. Mix with an electric mixer on low speed until moistened, then increase the speed to medium and beat for 2 minutes. Transfer the batter into the prepared baking pan.
  • Bake until a toothpick inserted in the center comes out clean, about 24-29 minutes in the preheated oven.
  • Prepare the poke filling by combining the gelatin mix with boiling water until fully dissolved, then stirring in the key lime juice until well combined.
  • Poke holes in the cake with a fork and spread filling all over. Chill in the refrigerator while you prepare the curd and frosting.
  • Prepare the lime curd: Whisk together eggs and egg yolks in a large glass bowl. In a smaller heatproof bowl, mix sugar, lime juice, lime zest, and cornstarch.
  • Set the heatproof bowl containing the sugar mixture over a pot of gently simmering water. Stir often, using a rubber spatula to scrape the sides and prevent burning, until it comes to a boil, approximately 5 minutes.
  • Gradually whisk the hot sugar mixture into beaten eggs. Set the bowl over simmering water and whisk until the curd thickens, about 10 minutes. Take off the heat and stir in melted butter.
  • Add drops of food coloring to the curd and stir until you reach your desired color. Allow it to cool to room temperature for a minimum of 30 minutes. Cover the surface directly with plastic wrap and refrigerate until fully chilled, approximately 2 hours.
  • Prepare the frosting by transferring most of the curd to a separate bowl. Gently fold in the whipped topping until fully incorporated. Spread the luscious frosting over the cake and chill until firm, around 2 hours.
  • Spread the remaining lime curd over the poke cake.
