Key sir alicha: East African vegetable dish with ginger and garlic, quick, easy, and vegetarian.
Ingredients:
  • 0.25 cup canola oil
  • 1 medium yellow onion, diced
  • 1 pinch salt
  • 1.5 teaspoons minced fresh garlic
  • 1.5 teaspoons minced fresh ginger
  • 2 large beets, diced
  • 1 cup water
  • 0.5 teaspoon salt
  • 4 large potatoes, diced
Instructions:
  • In a large pot over medium heat, heat oil. Add onion with a pinch of salt and cook until softened and translucent, about 5 to 10 minutes. Stir in garlic and ginger until fragrant, for about 1 minute. Mix in beets, then pour in 1 cup of water and 1/2 teaspoon of salt. Bring to a boil.
  • - Cover the pot and simmer over medium-low heat, stirring occasionally, until beets are fork-tender, 20 to 25 minutes. - Add potatoes and cook until tender but firm, about 15 minutes.
