Elevate traditional potato pancakes with ham and melty mozzarella cheese for a delicious twist.
Ingredients:
  • 2 large potatoes, peeled and shredded
  • 0.75 cup shredded deli smoked ham
  • 0.75 cup shredded mozzarella cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • olive oil for frying
  • 1 green onion, chopped
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Mix together the potatoes, ham, eggs, mozzarella cheese, onion powder, garlic powder, salt, and black pepper in a bowl.
  • Heat a large skillet over medium-low heat, then generously coat the bottom with olive oil.
  • Take a generous 1/2 cup of potato mixture for each pancake and shape into a patty. Create a total of 8 patties.
  • Cook 4 pancakes at a time in hot olive oil until beautifully browned, approximately 4 minutes per side. Then, transfer them to a plate lined with paper towels.
  • Finish with freshly chopped green onion and a generous dusting of grated Parmesan cheese.
