Popular Arabic-style meatloaf, a staple in every Arab household. Perfect paired with a crisp garden salad. Bon appétit!
Ingredients:
  • 1.5 cups vegetable oil for frying
  • 1 large potato, thinly sliced
  • 2 pounds ground beef
  • 0.5 onion, minced
  • 3 cloves garlic
  • 0.5 bunch fresh parsley, chopped
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons ground allspice
  • 1.5 teaspoons ground nutmeg
  • 1.5 teaspoons cumin
  • 1 large tomato, thinly sliced
  • 0.5 onion, sliced
  • 2 cups long grain white rice
  • 4 cups water
Instructions:
  • Preheat the oven to 350°F (175°C). Heat oil in a large skillet over medium-high heat. Fry potato slices until golden, then transfer to paper towels to drain.
  • Combine ground beef, minced onion, garlic, parsley, salt, pepper, allspice, nutmeg, and cumin in a mixing bowl. Press the mixture flat into a 7x11 inch baking dish. Layer potato slices evenly over the meat, followed by tomato slices and onion slices. Cover with aluminum foil.
  • Bake for 45 minutes in a preheated oven. Uncover and bake for an additional 15 minutes, or until golden brown.
  • As the kifta cooks, simply mix the rice and water in a saucepan. Bring to a boil, then lower the heat, cover, and simmer for 20 minutes until the rice is tender. Once the kifta is cooked, slice into squares and serve on top of the rice.
