Ingredients:
  • 100g quinoa
  • 2 kiwifruit, peeled, coarsely chopped
  • 1 shallot, cut into thin wedges
  • 35g dried cranberry
  • 250.00 ml flat-leaf parsley leaves
  • 60g fetta, crumbled
  • 20.00 ml white wine vinegar
  • 1 tsp fresh ginger, grated
Instructions:
  • Prepare the quinoa according to the packet instructions. Drain and rinse under cold running water. Place in a bowl and mix in the kiwifruit, shallot, cranberries, parsley, and feta, combining everything evenly.
  • In a small bowl, mix together the oil, vinegar, and ginger. Drizzle this flavorful mixture over the salad and toss until well combined.
