Spiralized kohlrabi noodles mimic linguine, paired with crispy bacon, caramelized onions, and grated Parmesan, transforming skeptics into kohlrabi fans!
Ingredients:
  • 3 kohlrabi bulbs, trimmed and peeled
  • 4 slices bacon, cut into small pieces
  • 0.5 medium yellow onion, sliced
  • 1 tablespoon olive oil, or as needed
  • salt to taste
  • 2 tablespoons butter
  • 0.33333334326744 cup grated Parmesan cheese
  • 2 tablespoons minced fresh parsley
Instructions:
  • Spiralize kohlrabi into thin noodles.
  • In a hot skillet, cook bacon and onion until the bacon is starting to crisp and the onion is caramelized but not burnt, for about 10 to 12 minutes. Transfer to a small bowl while keeping 1 tablespoon of bacon grease in the skillet. Add more oil if needed to reach 1 tablespoon of grease.
  • Place the kohlrabi in the skillet, sprinkle with salt, and cook over medium heat until tender, about 12 to 14 minutes. Stir in butter until melted, then add the bacon, onions, and half of the Parmesan, mixing well.
  • Garnish with the remaining Parmesan and fresh parsley just before serving.
