Soba Noodles with Ginger Sauce

Try this zesty ginger greens dish to help you slim down and feel great!
Ingredients:
  • 1/2 cup fat-free cholesterol-free egg product
  • 1 package (8 oz) soba (buckwheat) noodles or uncooked vermicelli
  • 1 cup frozen sweet peas
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon vegetable oil
  • 2 teaspoons finely chopped gingerroot
  • 1/8 teaspoon red pepper sauce
  • 1 clove garlic
  • 1 cup shredded spinach leaves
Instructions:
  • Prepare the skillet with cooking spray and heat over medium heat. Pour 1/4 cup of the egg product into the skillet and swirl to cover the bottom. Cook for about 1 minute until the egg product sets. Roll up the cooked egg, remove from the skillet, and let it cool. Repeat with the remaining egg product.
  • Prepare noodles according to package instructions, dropping in peas during the final 3 minutes. Drain.
  • Combine soy sauce, lemon juice, oil, gingerroot, pepper sauce, and garlic in a large bowl until well combined. Finely shred the egg rolls, then add them, along with noodles, peas, and spinach to the bowl. Gently stir until everything is evenly coated.
