Korean bao tacos

Quick and easy Korean-inspired tacos for a delicious weeknight meal.
Ingredients:
  • 1 Korean Style Duck Bao kit
  • 80g baby spinach
  • 95g (1/2 cup) cannellini beans, rinsed, drained
  • 2 green shallots, chopped
  • 80g broccoli, finely chopped
  • 70g (2/3 cup) coarsely grated colby cheese
  • Chilli sauce, to serve
  • Lime halves, to serve
Instructions:
  • - Preheat the oven to 180C/160C fan forced and lightly grease a medium baking dish. - Shred the duck meat from the kit, discarding the bones, and place it in a large bowl.
  • In a bowl, pour boiling water over the spinach. Drain and rinse the spinach under cold water. Squeeze out excess moisture and chop coarsely. Mix the spinach, beans, shallot, broccoli, and 1/3 cup cheese.
  • 1. Heat the buns according to the packet instructions, then gently flatten them out using a rolling pin. Spread the duck mixture on the buns, arrange them in a baking dish, and top with the remaining cheese. Bake for 20-25 minutes until golden, crispy, and the cheese is melted.
  • Drizzle with mayonnaise from the kit and chili sauce, then serve with lime halves.
