Slow cooked Korean beef tacos with sweet, savory, and zesty flavors.
Ingredients:
  • 1 (3 pound) beef chuck roast, trimmed
  • 0.5 medium onion, diced
  • 0.5 cup dark brown sugar
  • 0.33333334326744 cup soy sauce
  • 10 cloves garlic
  • 1 medium jalapeno pepper, diced
  • 1 (1 inch) piece fresh ginger root, peeled and grated
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon sesame oil
  • 16 (6 inch) corn tortillas
Instructions:
  • Add chuck roast and a flavorful mix of onion, brown sugar, soy sauce, garlic, jalapeño pepper, ginger, rice vinegar, sesame oil, salt, and pepper into the slow cooker. Cook on Low for 10 hours or High for 8 hours until the meat is incredibly tender and easily shredded with a fork.
  • Transfer the roast to a cutting board, use two forks to shred the meat, then mix the shredded meat back into the juices in the slow cooker.
  • Enjoy with warm corn tortillas.
