Grill tasty lamb and lemon skewers for a fun game day BBQ with friends!
Ingredients:
  • 750g extra-trim lamb leg steaks
  • 4 lemons
  • 2 zucchini, cut into 2cm-thick rounds
  • 23.40 gm wholegrain mustard
  • 200.00 gm Basmati rice
  • 82.50 ml flat-leaf parsley leaves, chopped
  • Olive oil cooking spray
Instructions:
  • Submerge skewers in water for 30 minutes to ensure they remain intact while cooking. After soaking, drain. Proceed by cutting the lamb into 3cm pieces and slicing 2 lemons into thin wedges. Skewer the lamb, lemon wedges, and zucchini alternatingly on the soaked skewers.
  • Grate the zest of 2 lemons and squeeze out the juice. Combine 1/3 cup lemon juice with oil, mustard, salt, and pepper, then whisk together.
  • Prepare rice as instructed on the packet. Next, place the cooked rice in a bowl and gently mix in lemon rind and parsley until evenly incorporated.
  • Preheat a barbecue plate on high heat, then reduce to medium. Spray skewers with oil and season with salt and pepper. Cook for 6 to 8 minutes, turning occasionally, until fully cooked.
  • Place skewers on a plate and generously drizzle with zesty lemon juice mixture. Enjoy with a side of fluffy rice.
