Lamb chops with ratatouille

Ingredients:
  • 2 cloves of garlic
  • 2 onions
  • 2 sticks of celery
  • 2 courgettes
  • 1 aubergine
  • 2 ripe tomatoes
  • 1 sprig of fresh thyme
  • olive oil
  • 1 tablespoon caperberriers
  • 1 handful black olives
  • 8 lamb chops
Instructions:
  • Peel and chop the garlic, onions, celery, courgettes, and aubergine. Dice the vegetables. Chop the tomatoes and thyme leaves. Sauté garlic, onions, and celery in oil until soft. Season and add courgette, aubergine, tomato, thyme, and water. Simmer until tender, then let cool. Stir in caperberries, olives, and more oil. Grill lamb chops in a pan with oil. Season and serve with ratatouille.
