Celebrate the release of Pixar's Ratatouille with a delicious homemade version paired with juicy lamb chops!
Ingredients:
  • 8 lamb chops
  • 1 large brown onion, chopped
  • 1 large zucchini, chopped
  • 250g button mushrooms, halved
  • 1/2 large eggplant, chopped
  • 2 x 400g cans chopped tomatoes
  • 40.00 ml oregano leaves
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Brown lamb in batches for 2 to 3 minutes on each side. Transfer to a plate.
  • Lower the heat to medium and sauté onion and garlic in a frying pan for 2 minutes until the onion is soft. Add zucchini, mushrooms, eggplant, tomatoes, and return the lamb to the pan. Cover and simmer gently for 30 minutes until the lamb is tender and the sauce slightly thickens. Stir in oregano, season with salt and pepper, then serve.
