Lamb meatball and yoghurt pita pockets

Savor lamb meatball and yogurt pita pockets: a tasty, healthy lunch on-the-go!
Ingredients:
  • 400g lamb mince
  • 1 brown onion, grated
  • 1.25 gm ground cinnamon
  • 2.50 gm ground cumin
  • 40.00 ml dried breadcrumbs
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 4 wholemeal pita pockets, halved crossways
  • 200g Greek Style Yoghurt
  • 180g mixed salad leaves
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a baking tray with baking paper.
  • In a large bowl, mix together the mince, onion, cinnamon, cumin, breadcrumbs, and parsley. Season with salt and pepper. Shape mixture into balls using 1 tablespoon at a time and place them on a prepared tray.
  • Bake until golden and cooked through, then allow to cool completely.
  • Stuff pita bread with meatballs, yogurt, and fresh salad greens to create a delicious and satisfying meal.
