Lamb skewers with crunchy salad

Try any type of marinated lamb skewers for a delicious twist!
Ingredients:
  • 1 x 500g lemon and garlic marinated lamb skewers
  • Olive oil spray
  • 1 x 520g pkt crunchy salad mix
  • 2 Lebanese cucumbers, thinly sliced
  • 1 x 250g punnet grape tomatoes, halved lengthways
Instructions:
  • Heat up your barbecue grill or chargrill to a medium heat. Give both sides of the lamb a generous spray of olive oil.
  • Place the lamb on the grill and sear each side for 4 minutes for a perfect medium doneness, or adjust cooking time to your preferred level of doneness.
  • In a large bowl, combine the salad mix and dressing from the packet. Add the cucumber and tomato, then toss until evenly mixed.
  • Serve the salad in individual bowls and top each with the lamb.
