Lamb skewers with lemon-fetta dressing

Delicious and quick lamb skewers with zesty lemon-fetta dressing - a must-try!
Ingredients:
  • 125.00 ml frozen peas
  • 200g snow peas, trimmed
  • 150g sugar snap peas, trimmed
  • 600g lamb leg steaks, cut into 2cm cubes
  • 1/2 x 320g jar marinated fetta, drained, reserving 1/4 cup oil mixture
  • 20.00 ml lemon zest
  • 42.00 gm lemon juice
  • 50g snow pea sprouts, trimmed
  • 125.00 ml fresh mint leaves
Instructions:
  • 1. Bring a saucepan of water to a boil. 2. Cook peas for 3 to 4 minutes until bright green and tender. 3. Drain and immediately cool them under cold running water.
  • Thread the succulent lamb onto skewers, drizzle with oil, and generously season with salt and pepper. Sear on a sizzling barbecue chargrill over medium-high heat, turning occasionally, until perfectly cooked to your preferred doneness, about 6 to 8 minutes.
  • Combine the reserved oil mixture, lemon zest, and lemon juice in a bowl. Season with salt and pepper to taste.
