Delicious Greek lamb skewers with tzatziki for a family dinner.
Ingredients:
  • 3 lemons, juiced
  • 20.00 ml dried Greek oregano (see note)
  • 1/2 tsp white pepper
  • 1.6kg lamb rump, diced into 3cm cubes
  • 1 lemon, juiced, to serve
  • 1 large green ridge cucumber
  • 500.00 ml plain yoghurt
  • 1 garlic clove, crushed
Instructions:
  • Mix together 1/2 cup of lemon juice, oregano, and pepper in a large ceramic dish. Add the lamb and coat it well. Cover and refrigerate for 4 hours, stirring every 30 minutes to marinate evenly.
  • Prepare the cucumber by peeling, halving lengthwise, and scraping out the seeds. Grate the cucumber and place it in a sieve over a bowl to drain for 30 minutes. Mix the drained cucumber with yogurt, minced garlic, and salt. Refrigerate the mixture until ready to serve.
  • Strain the lamb, keeping the marinade. Skewer 4 pieces of lamb on each skewer.
  • Heat the barbecue plate on medium-high heat and grease it lightly. Cook skewers, turning and basting with marinade, for 8 to 10 minutes until desired doneness. Place skewers on a platter, sprinkle with 1/4 teaspoon salt, and drizzle with 1 1/2 tablespoons lemon juice. Serve lamb skewers with tzatziki and Greek salad.
