Delicious lamb skewers with refreshing mint tzatziki - perfect for snack time!
Ingredients:
  • 800g Lamb Mince
  • 2 cloves garlic, crushed
  • 1 small onion, very finely chopped
  • 62.50 ml flat-leaf parsley, finely chopped
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 200 g Light Tzatziki Dip
  • 82.50 ml fresh mint leaves, finely chopped
  • 1 clove garlic, finely chopped
  • Olive oil spray
  • Lemon wedges, to serve
Instructions:
  • In a large bowl, mix together mince, garlic, onion, parsley, cumin, and coriander. Season well and blend until fully combined. Shape lamb mixture into 12 sausage shapes measuring 8cm each. Arrange them on a tray, cover, and chill in the fridge for 30 minutes. Meanwhile, soak 12 small bamboo skewers in cold water.
  • In a bowl, combine tzatziki, mint, and garlic. Refrigerate until ready to serve.
  • Skewer the lamb sausages. Preheat a greased barbecue plate on medium heat. Spray the skewers with oil and grill, turning occasionally, for 8-10 minutes until done. Rest for 5 minutes covered with foil. Serve with minted tzatziki and lemon wedges.
