Succulent Greek lamb skewers with flavorful roasted veggies - a speedy and nutritious meal!
Ingredients:
  • 750g sebago potatoes, peeled, cut into 3cm chunks
  • 750g pumpkin, peeled, deseeded, cut into 3cm chunks
  • 500g zucchini, cut into 3cm chunks
  • 45.50 gm olive oil
  • 3 garlic cloves, crushed
  • 3 tsp dried oregano
  • 750g easy-carve lamb leg
  • 10.00 gm Greek seasoning (see note)
  • Olive oil cooking spray
  • Tzatziki, to serve
  • Pita bread, to serve
Instructions:
  • Preheat your oven to a toasty 230°C. Grease a big roasting pan. In a large bowl, combine potatoes, pumpkin, zucchini, oil, garlic, and oregano. Give them a good toss to coat evenly. Spread the mixture over the roasting pan and roast for 30 minutes.
  • Cut the lamb into 2cm pieces, coat with Greek seasoning, thread onto skewers, and lightly spray with oil.
  • Lower the oven temperature to 200°C. Arrange the skewers on top of the vegetables and bake for 15 minutes for a medium cook or until desired doneness is reached.
  • Present an enticing platter of lamb skewers alongside a colorful array of vegetables, a dollop of creamy tzatziki, and warm, fluffy pita bread.
