Lamb skewers with satay sauce

Delicious Asian skewers perfect for hosting.
Ingredients:
  • 500g lamb loin backstraps
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 3 cloves garlic, crushed
  • 260.00 gm crunchy peanut butter
  • 42.00 gm Soy Sauce
  • 90.75 gm sweet chilli sauce
  • 21.60 gm hoisin sauce
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 315.63 gm coconut milk
Instructions:
  • Slice the lamb loin into thin strips lengthwise, then weave them onto wooden skewers in a zigzag pattern. Place the skewers in a dish, cover, and refrigerate until ready to use.
  • In a medium frying pan over medium-high heat, heat 1 tablespoon of oil. Add onion and garlic, stirring occasionally, until onion is just tender, about 2 to 3 minutes.
  • Combine all remaining ingredients and stir until they are fully incorporated. Lower the heat to a gentle simmer and cook for 10 minutes, stirring occasionally. If the sauce thickens too much, simply add a splash of water to reach your desired consistency.
  • Heat up a chargrill or large non-stick pan over high heat, then add the remaining oil. Cook the lamb skewers for 2 to 3 minutes on each side, or until they reach your desired level of doneness. Serve the skewers with satay sauce.
