Whip up flavorful dishes with minimal ingredients.
Ingredients:
  • 300g couscous
  • 36.40 gm olive oil
  • 4 x 180g portions lamb backstrap, trimmed
  • 187.50 ml Greek Style Yoghurt
  • 82.50 ml fresh mint, chopped
  • 1.25 gm ground cumin
  • 1 clove garlic, crushed
Instructions:
  • Mix together the yogurt, garlic, cumin, and 1/4 cup of water, then let it sit.
  • Coat the lamb in oil and season with salt and pepper. Sear in a hot non-stick pan for 4 minutes per side or until desired doneness. Rest the lamb covered with foil.
  • In a large heatproof bowl, pour 2 cups of boiling water over the couscous. Cover with plastic wrap and let it sit for 4 minutes. Uncover, add salt, pepper, oil, and mint, and use a fork to fluff up the couscous to separate the grains.
  • Slice the succulent lamb and plate alongside fluffy couscous topped with a creamy yoghurt dressing.
