Enjoy fuss-free individual lasagna muffins ready in just 20 minutes for a delightful dinner.
Ingredients:
  • 1 cup uncooked rotini pasta (3 oz)
  • 1 lb bulk Italian pork sausage
  • 1 1/2 cups tomato pasta sauce
  • 3/4 cup ricotta cheese
  • 1 can (16.3 oz) large refrigerated buttermilk biscuits
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Preheat oven to 350°F. Cook pasta according to package instructions, ensuring it is al dente, then drain.
  • In a 10-inch skillet, sauté the sausage over medium-high heat for 5 to 7 minutes until fully cooked; drain any excess fat. Add pasta sauce, ricotta cheese, and cooked pasta to the skillet, and simmer for 1 minute.
  • Divide dough into 8 portions and shape each into a 5 1/2-inch round. Press each round firmly into the bottoms and up the sides of 8 ungreased jumbo muffin cups, creating a 1/4-inch rim. Fill the cups with the sausage mixture and top with mozzarella cheese.
  • Bake until beautifully golden brown for 28 to 32 minutes. Let it cool for 1 minute, then gently remove from the pan.
