Quick and delicious individual lasagne pots ready in 45 minutes.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 2 garlic cloves, crushed
  • 600g beef mince
  • 410g can chopped tomatoes with tomato paste and roasted capsicum
  • 2 fresh lasagne sheets, each cut crossways into 4 pieces
  • 8 fresh basil leaves, torn
  • 158.40 gm fresh ricotta cheese, crumbled
  • 250.00 ml grated mozzarella cheese
  • Olive oil cooking spray
Instructions:
  • 1. Preheat oven to 200°C/180°C fan-forced. Grease four 1-cup capacity ovenproof dishes. 2. Heat oil in a large frying pan over medium-high heat. Add onion and garlic. Sauté for 3 minutes until onion softens. 3. Add mince and cook, breaking it up with a wooden spoon, for 6 to 8 minutes until browned.
  • Add tomatoes and mix gently. Season with a pinch of salt and pepper. Let it simmer without a lid for 10 minutes.
  • Boil half of the lasagne pieces individually in a large pot of boiling water for 10 seconds each. Remove with tongs and let them drain on a paper towel-lined board. Then place one piece of pasta into each dish.
  • Divide the mince mixture evenly into dishes. Add a layer of fresh basil and ricotta on top. Quickly cook each remaining lasagne piece for 10 seconds, using tongs to remove from the pan. Place the lasagne pieces over the ricotta mixture, letting them hang over the edges. Spoon the rest of the mince over the pasta, then sprinkle with mozzarella. Spray the pasta edges with oil before baking.
  • Bake until cheese is melted and golden, about 10 to 15 minutes. Serve hot.
