Layered Mint Chocolate Fudge

Indulgent chocolate fudge layered with refreshing mint fudge for a festive holiday treat.
Ingredients:
  • 2 cups semi-sweet chocolate chips
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk, divided
  • 2 teaspoons vanilla extract
  • 6 ounces white confectioners coating* or premium white chocolate chips
  • 1 tablespoon peppermint extract
  • 1 drop Green or red food coloring
Instructions:
  • In a heavy saucepan, gently melt chocolate chips with 1 cup of sweetened condensed milk. Stir in vanilla. Pour half of the mixture into a wax-paper-lined 8- or 9-inch square pan. Refrigerate for 10 minutes until set. Keep the leftover chocolate mixture at room temperature.
  • In a heavy saucepan, gently melt the white confectioners coating with the rest of the sweetened condensed milk until it becomes thick. Stir in peppermint extract and food coloring, if desired.
  • Smooth the chilled chocolate layer over the top and refrigerate for an additional 10 minutes until set.
  • Spread the decadent chocolate mixture over the refreshing mint layer. Let it chill for 2 hours or until it becomes deliciously firm. Transfer the creation onto a cutting board, peel off the paper, and elegantly cut it into squares. Store any remaining treats covered in the refrigerator for later enjoyment.
